Once the cows have been milked we start up the old truck, fill the flat tire and drive the tanks full of milk up to the quesero. Even though I think this family is not poor, nothing is wasted and nothing is new. All of the water used to clean all of the tanks, milking machine, pots, etc. and all of the whey (which is super high in protein, and amazingly rich and yummy), goes to feed the pigs. Any cheese scraps go to feed the chickens. The stove is antique, as are the tanks and the cheese forms. Our cheesecloths are old kitchen towels and old cut up cloth flour sacks. They all work great.If it breaks, you just fix it. Duct tape is a popular item here, but they are great at figuring out ways to fix pretty much anything with whatever they've got.
