Today was my last day at the Quesero. For the most part, I made this batch by myself. An intimidating, but also encouraging, experience. I learned one last thing about the quirkiness of cheese and said goodbye to my friend and mentor, Fernando, to Cristian, the gentle carer of the animals, and to Manuel and Mirta, the owners of the farm who were generous enough to let me come and learn.
