The final stage of "desuenar" - removing the whey from the curds. Starting to put curds in my form. The third picture is the ideal look and texture when you're done with the form process. I'm sure Fernando helped with this one - it took me a while to get it right.
Putting the press wood on to press out yet more whey. And finally adding weight that will stay there until the next day.
