Haciendo queso (making cheese) IV

There are 11 cows (Vacas) who get milked twice a day. We used a mix of fresh morning milk and the milk from the evening before. Just before I left milk production was decreasing and we were making about half the amount of cheese - down from 10 kilos to about 6. The cows are now being milked only in the morning, and one cow has stopped producing. There is a milk hiatus for the winter starting at the end of May.  High production will start again in September - South American Spring. These cows have a pretty good life. They roam around munching fresh grass on a huge acreage of land, the babies stay with the moms until they're sold and they are well cared for by the quiet and gentle young Cristian.
