There was a cultural performance for us last night that included a demonstration of the making of a special Amazon beer. It is made by the women for the men. Yucca (a very starchy, potato-ish root) is boiled in a big pot and cooled and mashed. Then the women chew the mashed yucca until it is soft, spitting the mash back into the mix. Then the mix is put into a big clay vessel, covered and left to ferment for a week. The saliva juices help the fermentation process. Sounds good, huh? It's very rude to decline it if offered...
